Creamy Red Pepper Pasta

This is the perfect no-fuss pasta boasting a quick time-to-table.

Ultra creamy, packed with smoky, tangy, charred roasted red pepper flavour!


Ingredients


✓ 1 large red pepper
✓ Handful of cherry tomatoes
✓ 1 garlic clove
✓ 100g pasta of choice (brown rice pasta, high protein & spelt pasta work well)
✓ 1.3 cup Cashew Nuts
✓ Coconut Oil
✓ Salt and pepper to taste
 ✓Almond milk


Method


#1 Preheat your oven to 180c. Place a tsp of coconut oil onto a baking tray and pop this into the oven to melt the oil

#2 Slice the pepper into pieces and pop this onto the baking tray along with the tomatoes. Toss everything together, so that everything is evenly coated in the oil

#3 Season with sea salt and black pepper and place the garlic clove onto the tray also. Bake these for around 20 minutes, until everything is really nice and soft

#4 Pop all of the ingredients into the blender, (squeeze the roasted garlic out of the skin, as you don’t want to blend this!) along with the cashew nuts and a good splash of almond milk to help everything blend

#5 Blitz until smooth and creamy and add more milk if needed

#6 Cook the pasta according to the instructions on the pack. Once cooked, drain and stir through the sauce until everything is piping hot

#7 Here you could always add in some cooked chicken or ham for extra protein. Serve and enjoy!
